Casper Asks What is for dinner Y'all

Casper AKA Saint Pain asks "What's for dinner?"

First item on the menu, Steak with peppers in a light sour cream sauce.

  • Start with a grade A steak of choice, I suggest a nice boneless cut such as a sirloin.
  • Spoon on a generous layer sour cream.
  • Lightly spice with Garlic, Oregano, just a hint of Basil, course ground black, white and red Pepper Corns.

My preference is to use fresh minced garlic and not to skimp on the black pepper but of course this should be a matter of personal taste.

  • Dice in equal measures, Red, Yellow and Green Bell Peppers with Sweet Onions, enough to again generously and completely cover steak.

This recipe could be done in a standard oven or on a grill with equally pleasing results. I use a Convection oven that allows me to catch all the juicy drippings to drizzle back over the steak once plated.

  • So as to keep the meat as juicy as possible only salt after the steak if fully cooked.

Another case for personal preference is cooking time. When it comes to steak I like mine quite rare even bloody enough to please a vampire ~;)

So that's it, quick easy and all so tasty. As Eclair says "Bon Appétit."

Next up on the menu is a side dish hearty enough to be a meal all in it's self.

It is an expansion on the soul food classic green beans with ham hocks.

  • Any green beans fresh or canned will do. To make this quick and easy I use a can of french cut green beans.
  • Then I dice approximately a 1/4 of a cup or so, maybe a bit less, each of Carrots, Celery, Potatoes, Peas and Mushrooms.
  • Then I add maybe an 1/8th of a cup each of diced Onions, Red, Yellow and Green Bell peppers.
  • Spice with tea spoon of minced Garlic, a hint of paprika, dash of oregano, course ground black, white and red pepper corns. Then salt to taste.
  • Add a couple of plump Ham hocks. Use enough water to cover the vegetables if you wish it to be stew or add more water to make it a full pot of soup.
  • Cover and cook on medium heat and once the carrots are tender it's ready to be enjoyed.

Italian spiced Maple, Hickory, Ham and cheese loaf.

  • This one will surprise folks for any meal of the day or night. The ingredients might seem contrary to each other but that is what makes it all the more surprising on your to tongue so bear with me & ye shall be rewarded with epic any time goodness.

Italian spiced Maple, Hickory, Ham and cheese loaf.

The base of this dish is biscuit dough. So any ready-made can or powdered mix will do fine.

  • Buy or mix your basic biscuit dough. Then get ready to kneed it with some diverse flavors.

In addition to any prescribed recipe, mix the following in a large bowl..

  • 1 lightly beaten egg.
  • Guess/measure what approximates an additional 1/8 of a cup of whole or Butter milk.(This ain't science have fun with it.)
  • A dash or Paprika.
  • Enough Oregano or Italian spice mix to lightly cover the palm of your hand, more or less to taste.
  • Lots of fresh cracked Black, Red & White pepper corns.
  • A healthy "additional" pinch of salt.
  • A teaspoon of cooking oil or "Even better Bacon drippings".
  • A teaspoon or so of minced garlic.
  • 3 or 4 liberal splashes of Liquid smoke Hickory flavor.
  • 1/4 cup or so of Maple pan cake syrup.
  • Mead this all with the base biscuit dough, until thoroughly worked in.
  • Preheat the oven to 450.
  • Dice at least a 1/4 lb. of cooked ham. (I like honey glazed and or smoked).
  • Grease or spray oil a baking dish..

Optional ~ Coat the greased baking dish with Italian spiced bread crumbs or shake and bake mix, which ever you like.


  • After coating the cooking dish pour in about 1/2 the dough.

Repeatedly wetting your hands from a bowl of water will help keeping the dough from sticking as you gently pat the first layer across the dish.

  • Next lay out sliced COLBY JACK cheese "Don't be shy have fun with it.
  • Cover this with lots of diced ham. (Are you hungry yet?)
  • One more layer of Colby Jack cheese. ( lightly Pat it all down to equally distributed the Ham and cheese.)
  • Cover with the rest of the dough.

Again smoothing out dough is all the more is easier with wet hands.

Cooking time : Accounting for the added moist ingredients it is just a wee bit longer than biscuits.

Check on it after 13 to 15 minutes when the top is golden brown and the crust has pulled away from the pans edge.. Your good.

It is smokey, spicy and sweet all in such measures ~ True comfort food.

Try this one folks ~ Your whole face will smile and you belly will warm. Peace on earth good will to men.

  • For Breakfast, or as a late night treat to cap off a bender, I recommend topping it with even more maple syrup as an alliterative to pan cakes. Your tongue will thank you.

Grilled Brat-Burgers with cheese

If you like Grilled Bratwurst and hamburgers you'll love this better than either.

Even in the dead of winter, it's time to fire up the charcoal.

  • Remove the casings from 1 pound of Bratwurst.
  • Add 1 and 1/2 pounds of lean Ground Chuck.
  • Dice 1 small tomato, 1/2 of an Onion. 1/4 each of Red, Yellow & Green Bell Peppers.
  • Add approximately 1/2 teaspoon of minced Garlic.
  • A healthy pinch of Oregano.
  • A splash of liquid mesquite smoke flavor.
  • Mead all ingredients until thoroughly mixed & shape in to 10, 1/4 pound patties.

Grilling tip: Never salt the meat until fully cooked.

  • Once a little over 1/2 cooked flip, then top with Colby Jack cheese.

Grill the face of either Poppy or Sesame seed buns until lightly toasted, then optionally prepare with toppings of choice. Lettuce, Tomato, Mayo, Ketchup and Brown or Horseradish mustard.

Brit baked chips with international flair

  • Scrub potatoes but leave the skin on.
  • Rough, long cut the potatoes in to wedges 1/4 to a wee less than 1/2 inch thick.

Rinse again & drip or towel pat dry the potatoes.

  • Beat one egg per 1/2 pound of potatoes.

{less makes a fine coating, More = a quiche}

  • Mix with , Black pepper, Oregano & Salt to taste. Then add the twist of Hickory liquid smoke flavor and a few splashes of Lemon juice.

Toss in the potatoes until well coated & let sit for 15 minutes or refrigerate up to a day or so. {This is a side dish for morning noon or night}

  • Preheat the oven to 450.
  • Spray oil or grease a pan.

Toss the potatoes one more time then pour it in the pan.

  • Top with a light coat of cracker crumbs, shake & bake or crushed Salad Croutons.

Bake until all is golden brown. 25-45 minutes.. Let stand 5 minutes.

Optional ~ Top with, YES again, The best cheese, Colby Jack or even better with booth Colby Jack and shredded Mozzarella & bake 5 more minutes.

  • Bake until the cheese is caramelized.

Pepperoni & other pork on Garlic bread with cheese

  • Mix minced garlic & Butter, then spread it over french bread.
  • Top with Pepperoni, Pre cooked Ham and Bacon.
  • Spice with fresh ground Black Pepper, Paprika, Onion salt & Oregano.
  • Liberally apply Mozzarella cheese.
  • Bake open faced halves in a preheated oven at 450 degrees for 15 minutes. Then slap it together as a glorious sandwich!

It is a tasty heart stopper.

Slow baked Veggies

Even in a non stick pan I recommend some spay oil to help toast all the vegetables. So coat your dish & spray the top at each stage of the cooking.

  • Dice in equal measure or use more or less to suit your own tastes. Onion, Potato, Celery & Baby Carrots.

Add to this in measures roughly 1/2 any one of the main vegetable ingredients, sliced Mushrooms and Black Olives, diced Red, Yellow & Green Bell Peppers.

  • Spice with minced garlic, fresh cracked black, white & red pepper corns.
  • Optionaly toss with Sun Dried Tomato, Oil & Vinegar dressing.
  • Recommended baking in none stick baking dishes, set the oven to 450 and bake 30 to 45 minutes. Mix again for even cooking then bake for an additional 15. Turn off the oven and let ambient heat finish cooking another 5-10 minutes.
  • Toss one last time, serve and salt to taste.


Then if you are like me & make too much for 1 meal. Bump up these leftovers into a cheesy quiche.

Again, coat your pan with spray oil, evenly distribute the cooked Veggies & preheat the oven to 425.

  • Lightly scramble 8 eggs. with 1/8th cup of sour cream. and 1 teaspoon of corn starch.
  • Optionally add 1 packet of Hidden Valley Ranch dressing mix.
  • Pour egg batter over the veggies and bake for 20-25 minutes or until the top is slightly golden brown & the crust pulls away from the pans edge. Top with diced green onion and lots of shredded Colby Jack cheese and bake of an additional 5 minutes.

Mexican Spiced Meat Loaf as a MEAL

I say as a meal because it needs no sides. It has more veggies than Pizza and far more meat.

Preheat the oven to 300.

  • In a large bowl lightly scramble 3 eggs.
  • Dice in 1/8th cup each, Onion, Green, Red & Yellow Bell peppers.
  • Add 1 can of drained mixed veritables.
  • Pour in 1 small jar of Salsa { I like it hot but mild still tastes good. }
  • Mix with 1 store bout pack of taco seasoning mix and 1/2 cup bread crumbs per pound of meat.
  • 1/4 cup Craft or generic, shredded Mexican style cheese blend.
  • Thoroughly knead all above with 2 lbs of ground chuck into a well mixed loaf.

This is a slow bake that will leave the meatloaf moist but never greasy. So just know the extra attention is worth it.

Spray oil coat a non stick pan big enough to bake pounds of meat. Then coat with bread crumbs. Pat the loaf out & bake for 25 minutes. THEN LEAVE THE OVEN ON, but pour off any excess oil & cook another 30 minutes. Then again pour off excess oil.

  • After the above approximation of 55 minutes or so, splice the top of the loaf into 15 sections, 3 down the length & 5 across just about 1/2 the depths of the pan.
  • Top with more shredded Mexican style cheeses { The more the better for my tastes }
  • Bake 15 minutes more.
  • Let each diner add season with spicy taco sauce & or Tabasco to their own taste.

Optionally wrap as a taco / burrito or just serve with corn chips.

Chips & salsa with melted cheese

On a plate big enough to fit in your microwave, scatter corn chips

I say again, On a clean plate, spread corn chips, cover with your shredded cheese of choice {Colby Jack RULES}. Nuke for 150 seconds or until the shredded cheese is all melted. Serve with salsa and be happy. Yer Hippy reincarnated munchies will fade away like a 70's flash back.

Alligator chowder

One of my all time best recipes. I found this great little specialty butcher shop on the west side of Indy called The Meat Shop and when I saw they had farm raised Alligator I just had to try it, so I searched for recipes on line but I did not like the way soo many called for added fats, oils and or butter.

So instead I did my own thing & it came out absolutely amazing.

  • 1 lb of bite size diced Alligator.
  • 5 stalks of diced celery.
  • About a table spoon of minced garlic.
  • 5 diced baby carrots.
  • 1 cup of chicken broth.
  • Enough poultry seasoning to lightly cover the meat.
  • 3 dashes of lemon pepper.

I flambéed it all in about 12 Oz of my Canadian blended whiskey until the alcohol burned off then I added 1 can of condensed cream of mushroom soup & simmered it for about 15-20 minutes.

It turned out light and creamy with an zesty crab like sea food flavor and a texture much like chicken.

It was well worth every penny at $15.88 a pound. I most highly recommend try'n this.

Alligator chowder' Revisited & or improved with green

This time start 2 big potatoes :Diced.

  • One small pack of baby carrots.
  • 2 table spoons of butter.
  • 3 pinches of oregano.
  • 2 dashes of lemon pepper.
  • 1/2 table spoon of minced garlic.

Boil until the carrots are just crisp then add 1/2 pound of frozen or fresh alligator white meat.

By the time the carrots cut easy with a fork the gator will be cooked through.

  • Add 1 can of chunk crab meat.
  • 3 ounces of green beans.
  • 2 ounces of diced mixed bell peppers ~ Red, yellow & green.
  • 1/2 diced medium sized oinion.

Stir in one can of condensed mushroom soup.

Stew for 10 minutes more & enjoy a celebration for the eyes nose & taste buds.. I swear if you like crab ~ THIS YOU WILL LOVE !!!
