Fresh potato, one of the world's largest food crops before the Great War, is a vegetable found in Fallout: New Vegas.
It restores some of your hit points without irradiating you. It is one of the few edible food items that doesn't give you any radiation, besides other fresh fruits or vegetables.
Additionally, in hardcore mode, it reduces starvation and dehydration. It can also be used to make, "Cook-Cook's Fiend stew".

Fresh fruits and vegetables are much more common in Fallout: New Vegas than in Fallout 3.
